Recipe Ingredients for Pinto Bean Soup

2 cups dried pinto beans
1 1/2 onion, chopped
2 tablespoons garlic
1 teaspoon coriander
1/4 tsp cayenne pepper
1 teaspoon cumin
8 cups water
4 stalks celery
2 carrots
1/4 cup brown rice
1 1/2 cups diced tomato
1/2 cup soy sauce, low sodium

Recipe Directions for Pinto Bean Soup

Chop the vegetables and add all ingredients except the soy sauce to the pot or a crock pot (make the night before and it will be ready for lunch).
