Recipe Ingredients for Pinto Bean Mole Chili

1 tsp. chili powder (chipotle or regular)
1 tsp. cumin seeds, toasted
1 tsp. dried oregano
1/8 tsp. cinnamon
1 onion, chopped
1 tbsp. olive oil
2 garlic cloves, minced
2 cups fresh spinach leaves
1 tsp. grated orange rind
1/8 tsp. sugar
1/2 oz. unsweetened chocolate, chopped
2 cups canned diced tomatoes
3/4 cups water
1 1/2 cups cooked pinto beans

Recipe Directions for Pinto Bean Mole Chili

Split 2 dried red chilies, remove stems and seeds. In a heavy skillet, over medium heat, toast chilies, opened flat, turning and pressing with tongs, until pliable and slightly changed in color. about 30 seconds. Tear into small pieces. Pulse cumin seeds and chili pieces in coffee grinder until finely ground. transfer to a small bowl; add oregano, cinnamon, chipotle chili powder. In a saucepan, cook onions in oil until soft. Add garlic. Add spices and cook 30 seconds. Add spinach (Swiss chard or kale), cook for 5 minutes. Add zest, sugar, chocolate, tomatoes with their juice and water, simmer, covered 15 minutes. stir in beans and simmer 5 minutes. add salt to taste.
