Recipe Ingredients for Pinto Bean & Grain Vegetable Burgers

2 1/2 cups pinto beans
1 cup canned yellow corn
1/2 medium bell pepper
1 onion
2 tbs tomato paste
2 tsp garlic powder
2 tsp ground cumin
1 tsp chili powder
1 tsp oregano
2/3 tsp salt
1/4 cup pearled barley
1/4 cup oatmeal
40 g oat bran
2 tbs cornmeal
2 tsp Worcestershire sauce
2/3 cup grated Parmesan cheese

Recipe Directions for Pinto Bean & Grain Vegetable Burgers

  1. Blend Oats, Barely, and Sesame Seeds into flour. Put mixture into a medium mixing bowl and add Oat Bran and Mozzarella. Stir together. Add all of the seasonings and sauce to the mixture and combine. In the blender or food processor, blend Pinto beans into a soft paste. Add onion and bell peppers and pulse. Add the beaten egg, and pulse once more. Stir Pinto bean mixture into Grain mixture, and combine with spoon or hand.

  2. Form into 9 balls, roll into the 1/2 cup of Parmesan cheese, and place on grill. Grill until burgers are brown and no longer pliable and sticky. They should be firm and lightly browned.

  3. If frying, use 1 tbs of olive oil for frying each burger.

  4. Serve Immediately or wrap each burger in plastic wrap and freeze.
