Pinto Bean Chili Recipe

From The Bean Book by Roy F. Guste, Jr. Also add 4 bay leaves to this recipe, I haven't added them in the ingredient list, because they wouldn't "size" and they are removed anyway. For a lighter version, omit the olive oil and salt, and add in 1 tbsp cider vinegar. You can also add meat, if so, fry in the oil before you add the onions.

Recipe Ingredients for Pinto Bean Chili

1 pound dry pinto beans (Pre-soaked at least 6 hours)
8 cups water
1/4 cup olive oil
3 large onions, chopped
2 large green bell peppers, chopped
2 stalks celery, chopped [11143 size=4]
2 large tomatoes, diced
6 cloves garlic, chopped
2 jalapeno peppers, seeded and minced
2 tbsp chili powder
1 tbsp dried cumin
2 tsp oregano
2 tsp salt
1 tsp black pepper
1/2 cup chopped cilantro

Recipe Directions for Pinto Bean Chili

  1. In a bean pot, simmer the pinto beans in the water with the 4 bay leaves for about 1 hour, until tender. Hold aside in the cooking liquor.

  2. In a large saute pan, heat the olive oil and saute the chopped onions, bell peppers and celery until limp.

  3. Add the tomatoes, garlic, jalapenos, chili powder, cumin and oregano.

  4. Add the cooked pintos in their liquor to the pan and season with salt and black pepper. Add more jalapeno or other pepper of your choice if desired.

  5. Cover and simmer for 1 hour, until the beans are very tender. Add more water during the cooking if you want a looser pinto bean chili. Uncover and simmer off the excess liquid if you want a thicker chili. Remove the bay leaves.

  6. A few minutes before serving, fold in the fresh cilantro and adjust the seasonings and peppers if desired.

  7. We serve our chili over rice. If eating with crackers/bread/etc. you will need to increase the serving size.
