Recipe Ingredients for Pink Lentils with Kale

2 tbsp extra virgin olive oil
1/2 vidalia onion, diced
1 cup potato, yukon diced
1/2 cup yellow squash, diced
1/2 cup zucchini, diced
1 cup kale, chopped
2 cups lentils, pink
1/2 tsp salt
1/4 tsp black pepper
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp curry powder

Recipe Directions for Pink Lentils with Kale

  1. Sautee vegetables in olive oil on medium heat.

  2. Add lentils and spices.

  3. Add water.

  4. Cook for 20 minutes.
