Excellent source of protein. Can be served with seafood or poultry. delicious with Panko crusted shrimp or salmon.

Recipe Ingredients for Pink Lentils with Kale

2 tbsp extra virgin olive oil
1/2 vidalia onion, diced
1 cup potato, yukon diced
1/2 cup yellow squash, diced
1/2 cup zucchini, diced
1 cup kale, chopped
2 cups lentils, pink
1/2 tsp salt
1/4 tsp black pepper
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp curry powder

Recipe Directions for Pink Lentils with Kale

  1. Sautee onion in olive oil on medium heat.

  2. add the vegetables and stir to cover all vegetables with olive oil.

  3. Salt and pepper lightly.

  4. Cook the vegetables for 5 minutes.

  5. Add lentils over the vegetables.

  6. Stir to coat the lentils with olive oil.

  7. Add 4 cups of water.

  8. Add the remaining spices and stir throughly.

  9. Continue to stir occasionally to keep the lentils from sticking.

  10. Add additional 2 cups of water after 20 minutes and continue to cook for 10 minutes.
