Recipe Ingredients for pink beans, Puerto Rico style

1 lb pinto beans, (use pink for this recipe)
2 tbsp olive oil
1 cup ham, smoked and chopped
1 cup onion, chopped
1/2 cup green pepper, chopped
4 cloves garlic
1/2 cup tomato sauce
2 tsp salt
1 tsp ground pepper
1/2 tsp oregano

Recipe Directions for pink beans, Puerto Rico style

  1. Sort and wash beans

  2. In a saucepan, soak beans in 8 cups water. DO NOT DRAIN.

  3. Meanwhile, heat oil in a large skillet over medium heat. Stir in ham, onion, pepper and garlic until tender.

  4. Stir mixture into beans in saucepan.

  5. Bring to a boil, Reduce heat, cover and simmer until beans are tender. Add more hot water if necessary.

  6. Stir in remaining ingredients. Cook 10 minutes longer.
