This recipe makes two loaves. It's a good recipe for those huge overgrown zucchini you might have in the garden.

Recipe Ingredients for Pineapple Zucchini Quick Bread

3 eggs
1 cup applesauce, unsweetened
1 cup sugar
1/2 cup Splenda
2 teaspoon vanilla
2 cups zucchini, shredded
1 cup pineapple
3 cups white whole wheat flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
3/4 teaspoon ground nutmeg
1 1/2 teaspoons cinnamon
3/4 cup raisins

Recipe Directions for Pineapple Zucchini Quick Bread

  1. Preheat oven to 350 degrees.

  2. Mix wet ingredients together in a large bowl.

  3. Sift together dry ingredients then add to wet mixture and stir just until combined.

  4. Stir in optional nuts and/or raisins.

  5. Pour into two greased loaf pans and bake for one hour, or until a toothpick inserted into the center comes out clean.
