Recipe Ingredients for Pineapple Zucchini Bread

3 eggs
1 cup applesauce
2 cups sugar
2 tsps vanilla
2 cups zucchini, shredded
5 ounces crushed pineapple, drained
3 cups flour
2 tsps baking soda
1 tsp salt
1/2 tsp cinnamon
3/4 tsp nutmeg
1 cup chopped walnuts

Recipe Directions for Pineapple Zucchini Bread

With rotary mixer, beat eggs. Add applesauce, sugar and vanilla and beat until thick and foamy. Stir in zucchini and pineapple. Combine flour with remaining ingredients and stir gently into zucchini mixture until well blended. Divide batter equally between 2 greased and floured 9x5 loaf pans. Bake at 350 degrees for approximately 1 hour or until done. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
