Use Whole Wheat Pasta. I blanch my vegetables so they're not tough, just crunchy.

Recipe Ingredients for Pineapple Vegetable Lo Mein

3/4 lb pasta, whole wheat
1/4 cup bell peppers, cubed
1/2 cup celery, cubed
1/2 cup carrots, sliced
1 cup broccoli florets
1/2 cup onion, sliced
5 oz black olives, sliced
1 clove garlic
10 oz water chestnuts, drained
10 oz pineapple, canned
1 tbsp olive oil
2 tsp soy sauce

Recipe Directions for Pineapple Vegetable Lo Mein

  1. Cook Pasta as directed and blanch Vegetables as desired(except onions and olives)

  2. Heat oil in a large wok and add garlic.

  3. Remove garlic when browned.

  4. Add onions and saute till translucent

  5. Add remaining vegetables and pasta

  6. Add pineapple with juice, and soy sauce

  7. Reduce heat and toss until heated through.
