Recipe Ingredients for Pineapple Upsidedown Cake

8 oz crushed pineapple
1/2 cup brown sugar
1 1/2 cup all purpose flour
1/4 tsp salt
1/2 cup unsweetened applesauce
1 cup Splenda
3 egg whites

Recipe Directions for Pineapple Upsidedown Cake

  1. Preheat oven to 400.

  2. Spray an 8x8x2 pan with cooking spray.

  3. Drain crushed pineapple reserving juice.

  4. Sprinkle brown sugar onto bottom of pan.

  5. Top with an even layer of crushed pineapple.

  6. In a large bowl, mix applesauce, sugar, reserved juice, and egg whites.

  7. Add dry ingredients and mix just to blend.

  8. Gently pour batter onto pineapple layer in pan. Do not mix. Bake 30 to 40 minutes or until toothpick inserted in center of cake comes out clean.

  9. Remove from oven and allow tocool 10 minutes.

  10. Invert cake onto serving dish and cool completely before serving.
