Pineapple Turkey Recipe

Can substitute fresh cut up broccoli for the frozen.

Recipe Ingredients for Pineapple Turkey

1 kg turkey breast, meat only
227 g pineapple slices, in juice
1 medium carrot, sliced fancy
3 spring onions, sliced diagonally
2 cup broccoli, frozen
2 tbs cloves
1 tsp Chinese 5 spice

Recipe Directions for Pineapple Turkey

  1. Stud the turkey breast with the cloves and place in pan. Add carrots and spring onions. If using fresh broccoli add at this point as well. Cover with pineapple slices and juice and sprinkle spices all over.

  2. Bake in 350 F oven until the meat is fully cooked, ~30 min to 1 hour.

  3. Let cool then cut into thin slices. Reheat with broccoli added.

  4. Serve with rice, couscous or buckwheat groats.
