Recipe Ingredients for Pineapple-Sour Cream Muffin Mix

1 1/4 cups all-purpose flour
1/4 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 egg whites
1/4 cup sugar
1/4 cup butter, softened
1 cup non-fat sour cream
1 cup crushed pineapple, well drained

Recipe Directions for Pineapple-Sour Cream Muffin Mix

  1. In a medium bowl, combine the mix ingredients (flour through salt). Transfer to a sandwich-size plastic storage bag; seal and label with recipe name and date.

  2. To prepare, preheat oven to 375 degrees. In a medium bowl, place dry ingredients from plastic bag. In a small bowl, beat together egg whites, sugar, butter and sour cream, add to dry ingredients and stir until just moistened; stir in pineapple. Spoon into paper-lined muffin cups. Bake for 15 to 20 minutes.
