Pineapple Scone Recipe...30 minutes start to out of oven.

Recipe Ingredients for Pineapple Scones

2 cups all-purpose flour
2 tsp baking powder
1 egg
1 tbsp vanilla extract
1/2 tsp sea salt
6 tbsp Granulated Sugar
8 tbsp butter
113 g whipping cream
1/2 pint fresh pineapple
1 egg
1 tbsp whipping cream
2 tsp Natural Cane Turbinado Sugar

Recipe Directions for Pineapple Scones

  1. Cut butter into cubes and refrigerate until ready to use.

  2. If using regular granulated sugar, mix well in a blender at high speed to pulverize it into finer baker's sugar.

  3. Preheat oven to 375 degrees Large baking sheet with silpat or lined with parchment paper.

  4. Sift the flour, salt, baking powder and sugar into a large bowl.

  5. Cut the butter into the flour mixture with pastry blender (or pulsed in food processor) until resembles coarse meal.

  6. In a smaller bowl whisk the egg, cream and vanilla ? add to the dry mixture mixing with a fork, and stir until just combined ? do not over mix!

  7. Fold in fresh pineapple.

  8. Pour the dough mix onto a lightly floured board and pat into a 7 inch 1 to 1 1/2 inch high disk.

  9. Cut into in half then quarters and then in eights as evenly as possible.

  10. Place the scones on a baking sheet with silpat or parchment paper ? this ensures even browning on the bottom

  11. For the topping:

  12. 1 egg beaten

  13. 1 Tbsp whipping cream

  14. 2 packets or tsp large raw sugar crystals

  15. Mix 1 egg with the 1 Tbsp of cream and brush the tops with the cream-egg mixture then sprinkle generously with the sugar crystals.

  16. For a moister scone; bake at 375 degrees for 17-19 minutes (varies by shelf and Oven).
