Recipe Ingredients for Pineapple rice

2 c uncooked jasmine rice
3 c water
3 c pineapple
1/4 c cilantro
1/2 c cashews
1 tbs oil
2 tbs garlic
1 onion, chopped
1 jalapeno pepper
2 tbs soy sauce

Recipe Directions for Pineapple rice

In a heavy pot, saute chopped onion, diced jalapeno pepper, and minced garlic until just softened. Add rice and stir to combine. Add water and pineapple, to include pineapple juice. Cover, bring to boil over high heat and then lower to simmer and cook for approximately 20-25 minutes until rice is done. Once rice is cooked, stir in cashews, cilantro, and soy sauce.
