Recipe Ingredients for Pineapple Relish

450 g (approx. one) pineapple
1 cup brown sugar
2 tbsp butter
2 tbsp cider vinegar
1 tsp curry powder
1/2 tsp salt
1/4 tsp ginger, ground

Recipe Directions for Pineapple Relish

  1. Peel and core pineapple, cut into very small pieces.

  2. Barely cover with water and bring to boil - simmer for 10min.

  3. Drain water and add other ingredients.

  4. Return to boil, stirring constantly, then simmer, stirring often for 10min.

  5. Spoon into hot clean jars and seal.
