Recipe Ingredients for Pineapple Pork II

2 1/2 lb pork
1 lb pineapple
1 bell pepper
1 onion
1 sweet potato
14 oz tomatoes (i82700)
2 garlic cloves, chopped
1 tablespoon Old Bay seasoning
1 tablespoon oregano
1 tablespoon cumin, ground
1/2 tablespoon Kosher salt (or less to taste)
1/2 tablespoon red pepper flakes (to taste)
2 tablespoons cider vinegar
1/4 cup brown sugar

Recipe Directions for Pineapple Pork II

  1. Chop all veggies & pineapple bite-size pieces.

  2. place peppers, onions, garlic, & pineapple in crock pot.

  3. mix spices & herbs in a small cup and rub over pork roast.

  4. place pork over veggies. Add tomatoes from can.

  5. Stir together cider vinegar & brown sugar and pour over all.

  6. cook on low setting for 6-7 hours

  7. chill thoroughly

  8. skim solid fat off top

  9. slice pork into serving size portions (8) and store in individual containers with veggies

  10. reheat by serving size in microwave

  11. freeze leftovers in serving-size portions
