these are great muffins, and pretty low fat.

Recipe Ingredients for Pineapple Muffins

2 cups whole wheat flour
3 tsp baking powder
1/2 tsp salt
1 large egg
1/4 cup canola oil
1/2 cup granulated sugar
1 cup skim milk
3/4 cup crushed pineapple, drained

Recipe Directions for Pineapple Muffins

  1. Preheat oven to 400 F (200 C) and prepare muffin cups.

  2. Combine the 3 first ingredients in a large bowl.

  3. In a medium bowl beat egg lightly and mix in the rest of the ingredients.

  4. Add wet ingredients to dry ingredients all at once and stir until batter is mixed but still lumpy.

  5. Fill muffin cups 3/4 full.

  6. Bake 20-25 minutes.

  7. HINT: be sure the crushed pineapple is well drained before measuring or your batter will be too moist.
