Mango is rich in betacarotene and vitamin C - both antioxidant nutrients - and pineapple also provides vitamin C.

Recipe Ingredients for Pineapple and Mango

472 g pineapple, ripe, 1 fruit
1 mango, large
76 g lime juice (plus zest, 2 limes)
2 tsp clear honey (acacia)

Recipe Directions for Pineapple and Mango

  1. Peel the pineapple, cut into 1 cm rounds then cut each round into quarters.

  2. Slice through the mango either side of the stone. Peel, then cut the flesh into cubes.

  3. Place the fruit in a serving bowl.

  4. Finely grate the rind from the limes and add to the fruit. Squeeze the juice then put in a small saucepan with the acacia honey. Heat gently, stirring, just until the honey has dissolved. Allow to cool.

  5. Pour the cooled lime juice over the fruit and toss well.
