Pineapple Ice Cream Recipe

A twist on the french vanilla recipe I have.

Recipe Ingredients for Pineapple Ice Cream

8 fl oz Pineapple Juice
8 fl oz Cream, Fluid, Heavy Whipping
4.5 oz Sugars, Granulated
4 oz Egg, Yolk
1/2 cup Pineapple Chunks

Recipe Directions for Pineapple Ice Cream

  1. Roast the pineapple chunks with a little bit of sugar on top in the oven.

  2. Allow the pineapple chunks to cool.

  3. Place the cream and sugar into a heavy-bottomed pot and bring to a boil.

  4. Place the egg yolks in a bowl and whisk.

  5. Temper the egg yolks with the cream.

  6. Place back into the pot and heat until the mixture is nappe.

  7. Add the pineapple juice.

  8. Freeze in an ice cream machine.

  9. Once you have taken the ice cream out of the machine, mix in the roasted pineapple chunks.

  10. Chill the ice cream in a blast freezer.
