Recipe Ingredients for pineapple ginger muffins

1 1/3 cups millet, cooked
2 cups oatmeal
1/4 cup honey
3/4 cup dried pineapple, chopped
1/3 cup walnuts, chopped
2 large eggs
1/3 cup sour cream
2 tbsp fresh ginger, grated
1/4 cup skim milk
2 tsp baking soda
1 tsp baking powder
1/4 cup crystallized ginger, sliced
1/4 cup coconut oil
1/2 cup water

Recipe Directions for pineapple ginger muffins

  1. mix together, add water until proper consistency (muffin like)

  2. bake at 350 until golden brown
