Very juicy easy to make fruit cake

Recipe Ingredients for Pineapple fruit cake

4 oz butter
6 oz brown sugar
12 oz mixed fruit
300 g crushed pineapple
4 oz glace cherries
2 eggs
12 oz self raising flour
1 oz mixed spice

Recipe Directions for Pineapple fruit cake

  1. melt the butter and sugar in a big sauce pan

  2. add the mixed fruit (raisins, currents, chopped mix peel) cheries and crushed pineapple

  3. bring to a gentle boil making sure the sugar has disolved then leave to cool

  4. beat the eggs in a bowl and mix them into the pan

  5. prepare your cake tin (20cm diameter loose base deep round) with non stick baking parchment cut to size

  6. mix flour and mix spice then sieve into the pan with other ingredients

  7. mix quickley then spoon into tin and bake for 75mins (at most) at a temperature of 150'c

  8. when cooked eave to cool a bit in the tin then revomve and take off all paper, leave to settle in flavour for a day the cut into and enjoy.
