"We like this one. The rice is cooked in pineapple juice. A very good beginning. And then its added to soy sauce, green onions and carrots. Garnish with crushed pineapple and strips of cooked egg. Yumm!"

Recipe Ingredients for Pineapple Fried Rice

144 oz Crushed Pineapple
4 1/2 gallon water
36 cups white rice
1 1/4 cup canola oil
36 eggs
3 T. sesame oil
3 1/4 cups soy sauce
3 cups green onions
18 cups diced carrots

Recipe Directions for Pineapple Fried Rice

  1. Open cans of crushed pineapple and drain into a cup.

  2. In Tilt skillet, combine the pineapple juice from the can with 3 gallons of water, bring to a boil. Add rice. Bring mixture to a boil. Cover and reduce heat to simmer. Cook 25-30 minutes or until rice is tender.

  3. In non-stick pan heat canola oil. Add the eggs and cook without stirring until set. Slide eggs out of pan and cut into short narrow strips. In the same pan heat sesame oil and stir fry with soy sauce, green onions and carrots for about 5-7 minutes. Stir in cooked rice, pineapple and egg strips. Heat until everything is heated through.
