A traditional Thai dish with chicken flavored rice and chicken offset with sweet pineapple and cranberries.

Recipe Ingredients for Pineapple fried rice

2 cups rice
16 ounces chicken breast
2 1/4 cups pineapple chunks
2 oz walnuts
48 grams chicken bouillon
1/2 cup dried cranberries
2 T olive oil
2 t curry

Recipe Directions for Pineapple fried rice

Disolve bouillon in 4 cups of water. Add rice and bring to a boil. Cover and simmer for 20 minutes. Sautee Chicken and nuts in olive oil and flovour with gralic salt and curry. Mix all incredients together and add pineapple last. This dish offers a nice contrast of salty and sweet flavours.
