Recipe Ingredients for Pineapple Fried Rice w/Chicken

7.5 grams Extra Virgin Olive Oil
2 tsp Garlic
2 serving (Ozark Farmers Market) Large Eggs
2 cup Rice, White, Long-grain, Regular, Cooked
1 medium (4-1/8" long) Onions, Spring Or Scallions
0.67 serving Great Value Less Sodium Soy Sauce
1 tsp Sea Salt
2 serving White Pepper
1/2 cup Pineapple Tidbits in 100% Juice
0.5 cup Peas, Green
1/2 cup slices Carrots
2 cup, chopped or diced Chicken, Breast, Meat Only

Recipe Directions for Pineapple Fried Rice w/Chicken

  1. Cut up chicken breast into bite sized pieces and cook in non-stick skillet with just a drizzle of olive oil. Once chicken is cooked transfer chicken to a bowl.

  2. Add olive oil to already heated chicken pan and add minced garlic. Saute until it starts to brown. Add chopped vegetables.

  3. Pour rice (previously cooked & preferably chilled) into pan mixing with the oil and garlic. Add soy sauce, salt, white pepper, and pineapple. Stir.

  4. Add chicken. Stir.

  5. Scoot rice mixture to one side of pan and crack your eggs into the empty space. Scramble the eggs, then fold them into the rice mixture.

  6. Serve topped with chopped green onions and cashews.
