Recipe Ingredients for Pineapple Edamame Rice Bowl

1.5 cup Rice, Brown, Long-grain, Cooked
10 oz Organic Edamame
14 oz Organic Pineapple Chunks
4 large Onions, Spring Or Scallions
3 tbsp Genmai (Brown Rice) Miso, Organic
3 tsp Ginger Root
8 oz Seitan
3 serving, raw Cilantro

Recipe Directions for Pineapple Edamame Rice Bowl

  1. Mince scallions

  2. Grate ginger root

  3. Cook rice if not already done

  4. Thaw edamame

  5. Drain pineapple reserving juice

  6. Sautée seitan, scallions, and ginger until seitan is browned

  7. Add pineapple juice and simmer for a few minutes

  8. Whisk in miso

  9. Add edamame, pineapple and rice

  10. Simmer until most of liquid is evaporated.

  11. Stir in cilantro.

  12. Serve with sriracha hot sauce
