Recipe Ingredients for Pineapple Dump Cake

15 oz canned pineapple
1/4 cup lemon juice
3 cups self-rising flour
1 1/2 cup sugar
1/2 cup canola oil
1/2 cup margarine

Recipe Directions for Pineapple Dump Cake

  1. Preheat oven to 350.

  2. Dump one can of pineapple along with the juices into a 9 x 13 casserole dish. Crushed or tidbits are fine, but if you have larger pieces, you may want to cut them up into tidbits.

  3. Add 1/4 cup lemon juice. You may substitute any additional fruit juice. This is only because I prefer extra moisture in this cake, so this is somewhat optional. The lemon juice doesn't really add any flavor, just more juice. Swirl the juice around so that it is combined with the other juices and make sure the fruit is evenly distributed in the pan.

  4. In a separate bowl, sift together flour and sugar.

  5. Add oil to the flour mixture and mix with a fork or whisk until it is a crumb-like texture.

  6. Sprinkle crumb topping evenly over the fruit.

  7. Add several dollups of margarine on top of the crumb topping.

  8. Bake for 30-45 minutes or until golden brown on top.
