Very easy to make muffins. Great for a snack or with a protein shake for breakfast.

Recipe Ingredients for Pineapple & Dried Fruit Muffins

1 1/4 cups soy milk
240 g oat bran
1/2 cup demerara sugar
1 1/4 cups whole wheat pastry flour
1 tbsp baking powder
8 oz can unsweetened crushed pineapple packed in juice, undrained
2 egg whites
1/4 cup chopped dried apricots
1/8 cup chopped prunes
1/8 cup craisins
1/4 cup chopped walnuts

Recipe Directions for Pineapple & Dried Fruit Muffins

Preheat oven to 350 degrees. Combine milk, oat bran, and demerara. Allow to rest 15 minutes. Mix flour and baking powder well in large bowl. Add bran mixture, egg whites, nuts, dried fruit and pineapple and its juice. Stir just until cake tester comes out dry. Allow muffins to remain in tin 5 minutes before removing.
