Pineapple "Custard" Recipe

like creme caramel but with pineapple instead of milk in custard

Recipe Ingredients for Pineapple "Custard"

175 g sugar
6 tbsp. water
850 g canned pineapple (450 g canned plus 400 g fresh or similar combo)
1/4 cup sugar
6 eggs
2 tbsp. cornstarch

Recipe Directions for Pineapple "Custard"

  1. Make a caramel from the sugar and water, and use it to coat a mould.

  2. Liquidise the pineapple in a blender.

  3. Combine pineapple, liquid from can (if canned) and 1/4 cup sugar in a saucepan. Bring to the boil, and boil for 2-3 minutes. Let cool slightly.

  4. Beat eggs. Add a small amount of beaten egg to cornstarch to dissolve then add cornstarch mixture to rest of eggs.

  5. Slowly add pineapple mixture to eggs and mix well.

  6. Pour custard into caramelized mould.

  7. Bake in a bain marie for about 30 minutes. (I used 350 F oven and roasting dish full of water.)
