Pineapple Cornbread Recipe

Makes 16 servings



Best made with whole blue corn meal or atole, but you can use regular corn meal if it isn't available. Delicious with soup or beans, and especially with chile.

Recipe Ingredients for Pineapple Cornbread

1 cup corn meal
1 cup white flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
2 eggs
1/2 cup 1% milk
1/4 cup butter (melted)
1 cup canned crushed pineapple in juice

Recipe Directions for Pineapple Cornbread

  1. Combine all dry ingredients.

  2. Mix together, and leave well in the middle of the mixture.

  3. Into the well, put the butter, eggs, milk and pineapple.

  4. Mix together until totally blended, but don't over-mix

  5. Put into a 9 X 9 buttered baking pan and

  6. Bake at 400 degrees until browned (about 25-30 minutes).
