Recipe Ingredients for Pineapple Chutney

2 tbsp unsalted butter, preferably irish butter
3 tbsp shallot , minced
1 cup canned pineapple chunks in juice, drained and diced
1 granny smith apple, peeled, cored, and diced
1 tbsp tomatoe sauce
2 tbsp brown sugar
1 dash of Irish whiskey
1 Freshly ground pepper to taste

Recipe Directions for Pineapple Chutney

In a medium saucepan over medium heat, melt the butter. Cook the shallot for 3-5 mins, or until soft but not browned. Add the pineapple, apple, tomato sauce, and brown sugar. Bring to a boil, then reduce the heat to medium-low and simmer for 15-20 mins, or until the mixture thickens. Stir in the whiskey and season with pepper. Remove from the heat and allow to cool. Refrigerate for up to 24 hours.
