Recipe Ingredients for Pineapple chicken

3 oz uncooked chicken breast
1 teaspoons vegetable oil
3 oz sliced green bell pepper
3 oz Carrots, Baby
3 oz onion, large dice
1/4 clove garlic, minced
1 teaspoon cornstarch
1 tablespoon low sodium soy sauce
1/2 cup chicken broth [or pineapple juice]
3 oz pineapple chunks, drained
3/4 teaspoon vinegar
1/2 teaspoon brown sugar
1/4 teaspoon ground ginger

Recipe Directions for Pineapple chicken

  1. Brown meat in oil in a large skillet over medium high heat. Add bell pepper, carrot, onion and garlic and stir fry for 1 to 2 minutes.

  2. In a small bowl, combine cornstarch and soy sauce, broth or juice and mix together; pour mixture into the skillet, along with the pineapple, vinegar, sugar and ginger. Stir together and bring to a full boil.

  3. Serve with 1/2 cup rice and green salad.
