Perfect holiday side dish. I usually triple this recipe.

Recipe Ingredients for Pineapple Casserole

3 tbsp flour
1/2 cup sugar
20 oz pineapple chunks
4 oz. cheddar cheese, 2% milk
1/2 cup crackers
1/4 cup smart balance spread

Recipe Directions for Pineapple Casserole

  1. Mix sugar, flour and 3 tbsp pineapple juice

  2. Add pineapple chunks and cheese

  3. Crease 1 quart casserole.

  4. Pour mixture into dish and sprinkle with Ritz crackers.

  5. Pour melted butter over top

  6. Bake 20 minutes
