These are delicious, sweet, and healthy muffins that make a great breakfast for fall.

Recipe Ingredients for Pineapple Carrot Muffins

7 serving Flour
1 tsp Baking Soda
1 dash Salt, Table
1 tsp Cinnamon, Ground
0.33 cup Sugars, Granulated
1 cup Crushed Pineapple
1 cup, chopped Carrots
0.25 cup Vegetable Oil, Canola
3 tbsp Milk, Fluid, 3.25% Milkfat
1 large Egg, Whole

Recipe Directions for Pineapple Carrot Muffins

  1. Combine first 6 ingredients in a medium bowl, make a well in center of mixture.

  2. Combine pineapple, carrot, oil, milk, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.

  3. Spoon batter into muffin pans coated with cooking spray, filling two thirds fill. Bake at 400 degrees for 20- 25 minutes or until golden. Remove from pans immediately.
