Moist, sponge-style cake with old fashioned milk/butter glazing. about 5 minute prep time and 40 minute bake and finish

Recipe Ingredients for Pineapple Cake

2 cups flour
1 1/2 cups white sugar
2 eggs
1 tsp baking soda
15 oz crushed pineapple, with juice
6 oz evaporated milk, low fat
4 tsp margarine, melted

Recipe Directions for Pineapple Cake

  1. Mix first five ingredients just to moistened. Bake @ 350 degrees for 35 minutes in greased 9x13 pan.

  2. Meanwhile, heat the milk and margarine to boil until till margarine melts in the microwave, about 1-2 minutes (watch it carefully). Pour slowly over cake hot out of the oven. Let it set about 5 minutes. Serve warm or room temperature. Refrigerate leftover cake.
