From "The Country Innkeepers' Cookbook," by Wilf and Lois Copping. Yankee, 1978. Kind of sweet, and I think the batter is too thin.

Recipe Ingredients for Pineapple Bran Muffins

1/2 cup sugar
1/3 cup shortening
1/3 cup honey
2 eggs
1 1/3 cup all-bran
1 1/3 cup all-purpose flour
2 teaspoon baking soda
1/2 teaspoon salt
1 cup evaporated milk
1 cup crushed pineapple, drained

Recipe Directions for Pineapple Bran Muffins

  1. Cream the sugar, shortening, and honey together.

  2. Add the remaining ingredients and mix lightly.

  3. Fill greased muffin cups two-thirds full.

  4. Bake for 25 minutes at 350 degrees.

  5. The filled, unbaked muffin pan can also be covered and stored in the refrigerator overnight.
