Modification of mother's recipe, reduced salt and replaced sugar with Splenda, replaced Crisco with oil and applesauce. I throw in extra dried fruit (cranberries, apricots) and sometimes add grated orange or lemon peel.

Recipe Ingredients for Pineapple Bran Muffins 2

2 c All Bran
4 c buttermilk
4 c bran flakes
1/2 c canola oil
1/2 c apple sauce
2 c water
3 t salt
5 t baking soda
5 c whole wheat flour
2 c Splenda
4 eggs
15 oz crushed pineapple in juice
2 c raisins
1 c chopped walnuts

Recipe Directions for Pineapple Bran Muffins 2

  1. In large bowl, mix buttermilk & All Bran, let sit 5 minutes.

  2. Beat eggs.

  3. Add butter, oil, water, eggs, pineapple and bran flakes.

  4. Mix flour, salt, baking soda, Splenda, add add to mixture, stir well.

  5. Stir in raisins, walnuts, zucchini and other dried fruit or grated orange peel if desired.

  6. Spoon into muffin pans that have been lined or sprayed with Pam. Bake at 400 for 20 minutes.
