1 cup red onion, sliced
1 cup red bell pepper
1 cup pineapple, sliced
1/3 cup pineapple juice
2 cups black beans
1/2 cup red chilies
1/2 cup fresh cilantro, chopped
1 1/2 cup cheddar cheese
8 flour tortillas
3 cups Enchilada Sauce

  1. stirfry pineapple, beans and peppers

  2. put one spoon enchilada sauce on wrap

  3. add one spoon veg mix

  4. add one spoon cheese

  5. roll up

  6. put in dish with enchilada sauce on top
