Pina Colada Cupcakes with Buttercream Icing

Recipe Ingredients for Pina Colada Cupcakes

2 cup Flour, All Purpose
2 tsp Baking Powder
0.25 tsp Salt, Table
1 cup Sugars, Granulated
0.5 cup Milk, Lowfat, Fluid, 1% Milkfat
1 stick Butter
0.5 tsp Vanilla Extract, Imitation, No Alcohol
0.25 cup, crushed, sliced, or chunks Pineapple
4 large Egg, White
8 tbsp Coconut
8 tbsp Vegetable Shortening
1 stick Butter
1 tsp Vanilla Extract, Imitation, No Alcohol
4 cup Confectioners Sugar
0.13 cup Milk, Nonfat, Fluid
1 oz Pineapple Juice
0.13 cup Crushed Pineapple
2 tbsp Coconut

Recipe Directions for Pina Colada Cupcakes

  1. Preheat over to 350 degrees.

  2. Line 12 cupcake tins with foil or paper liners.

  3. Mix flour, baking powder and salt in mixing bowl.

  4. Beat butter to make a creamy consistency, while gradually adding the sugar, for a fluffy consistency.

  5. Add flour mixture, and milk alternating until blended.

  6. Add vanilla, coconut extract and rum.

  7. Fold in shredded coconut.

  8. Fold in Pineapple and juice.

  9. Beat egg whites separately, and gradually add to batter.

  10. Pour into cupcake tins

  11. Bake for 15 to 18 minutes until an inserted toothpick comes out clean.

  12. Cool completely.

  13. In large bowl, cream shortening and butter with electric mixer. Add vanilla and coconut extract. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add pineapple juice and pineapple, when mixed add coconut. Add milk and tablespoon at a time (you might not need both) and beat at medium speed until light and fluffy. If it looks dry or feels gritty add the second tablespoon of milk. (you can add milk tablespoon at a time until you feel like it?s right but 2 should do it). Keep bowl covered with a damp cloth until ready to use.
