Light and sinful start to the day. I refridgerate the coconut milk to make it thick like yogurt. I also add walnuts to the recipe from time to time just to add a little variety. Keep in mind that the nuts change the nutritional information a little bit.

1/3 cup coconut milk
1/2 cup pineapple
1/4 cup mandarin oranges
1 tablespoon toasted coconut

  1. Place fruit in a bowl

  2. pour coconut milk over fruit

  3. toast coconut over low heat in a pan

  4. sprinkle coconut over fruit and milk

  5. enjoy!!
