Rice pilaf with carrots, sweet potatoes, cabbage, green beans, zucchini, and tuna

Recipe Ingredients for Pilaf Light Colored Vegetables and Tuna

1 cup sweet potatoes
1 cup carrot
1 cup purple cabbage
1 cup zucchini
1 cup green beans
1 medium onion
2 cloves garlic
1 can tuna
1 tablespoon sunflower oil
1 tablespoon olive oil
2 tablespoon lemon juice
3 cups cooked Basmati rice
1 tablespoon cooked orzo
1 tablespoon oyster sauce
1/4 teaspoon salt

Recipe Directions for Pilaf Light Colored Vegetables and Tuna

  1. Put oils in skillet and heat at medium high.

  2. Add onions,garlic, carrots, sweet potatoes, cabbage, beans, and zucchini.

  3. Cook for about 15 to 20 minutes, stirring about every 5 minutes until carrots are soft, but crisp.

  4. Add tuna, lemon juice, rice, orzo, and oyster sauce, salt and spices.

  5. Fold all ingredients together until well blended.

  6. Cook another 5 minutes without a cover and fold again.

  7. Remove from heat and serve.
