Pierre Hermé's pâte brisée recipe. Makes enough pastry for two double-crust pies.

Recipe Ingredients for Pie Crust

13 ounces butter
1 egg yolk
1/2 cup half and half
1 tsp sugar
1 tsp salt
3 1/2 cups all-purpose flour

Recipe Directions for Pie Crust

  1. Beat butter on low speed until creamy.

  2. Add all other ingredients except flour; beat until curdled looking.

  3. With mixer running, add flour steadily. Beat until dough begins to hold together.

  4. Knead very briefly, then cut into 4 equal portions. Flatten each into a disc and wrap in plastic wrap. Chill 4 hours (or overnight) before rolling out.
