Pico De Gallo Recipe

Fresh pico!! Use in eggs and on top of proteins. This makes a large batch (about 3 times the amount you get at the market for the price of 1). Serving size is about 1/4 cup and the whole recipe is about 6 cups.

Recipe Ingredients for Pico de Gallo

4 beefsteak tomatoes, seeded and chopped
1 med sweet onion, diced
2 jalapeno peppers, seeded and finely diced
2 tbs lime juice
1 tsp cumin
2 tbs dried Cilantro leaves
1 tsp salt

Recipe Directions for Pico de Gallo

  1. Seed and dice the tomatoes in small 3/8 inch pieces. Discard seeds and juice. Cut out membrane between seed pockets but keep meaty ribs and chop.

  2. Dice onion in small 3/8 inch pieces.

  3. Seed and remove membrane from jalapeno pepper. Make thin slices and dice fine.

  4. Mix tomatoes, onion, peppers, lime juice, cumin, cilantro, and salt.

  5. Let stand for at least 3 hours.
