A lowfat pico de gallo. I serve with Blue Corn Chips which are unsalted to lower the sodium. You can omit the salt altogether if you wish but it really brings out the flavor in the tomatoes.

Recipe Ingredients for Pico de Gallo

3 1/4 cups tomato, diced
1/2 cup vidalia onion, diced
1/4 cup cilantro, chopped
1 tbsp lime juice
1/4 tsp salt

Recipe Directions for Pico de Gallo

  1. Combine all ingredients, mix.

  2. Refrigerate 1/2 hour.

  3. Serve.
