Recipe Ingredients for Pico de Gallo con pollo

2 Green Pepper
1 Red Pepper
2 pepper Anaheim Chile
3 Jalapeno peppers
8 Roma tomatoes
3 cloves garlic
4 tomatillos
3 oz fresh cilantro
1 small red onion
1 sweet onion
20 oz chicken breast
2 cup refried beans
8 flour tortillas
1 tsp salt
1/4 tsp black pepper
3 tbsp balsamic vinegar
2 oz Romano cheese
1 tbsp Olive Oil

Recipe Directions for Pico de Gallo con pollo

  1. Chop all vegetables very small and combine in large bowl. Mix well, sprinkle on salt, pepper, and vinegar. Allow to sit in fridge for several hours for flavors to meld.

  2. Chop chicken very small and fry in large skillet with olive oil until completely cooked. When chicken is fully cooked, add in vegetables. Cook over high heat until vegetables are soft.

  3. Heat refried beans in small saucepan and warm tortillas in microwave. Spread thin layer of refried beans on tortilla and add 1/8 of meat and veggies. Sprinkle with cheese and fold.
