Picnic Sandwich Recipe

A great sandwich for a picnic lunch buffet.

Recipe Ingredients for picnic sandwich

615 grams french bread (three 20" loaves)
1 cup mayonnaise
2 tablespoons chives
1/4 cup parsley
6 oz hot peppers (actually use 6 oz Peperoncini - thinly cut)
6 plum tomatoes (thinly cut)
1/2 english cucumber (thinly cut)
12 leaves of romain lettuce
384 grams artichoke hearts (one jar)
1 lb ham
1 lb pastrami, turkey (or better 1 lb sweet cappicola)
1 lb pepperoni
1 lb salami
2 lb provolone, sharp

Recipe Directions for picnic sandwich

  1. In the making of this sandwich make sure to have two cookie sheets, a bread board (the same size as the cookie sheets) and some twine or rope.

  2. Mix the mayonnaise, parsley and chives (adding salt and pepper to taste).

  3. Slice the french bread in half (long way).

  4. Hollow out the bottom slice of each loaf.

  5. Spread the mayonnaise on each slice of the bread.

  6. Place 3 leaves of lettuce on the bottom slice of each loaf.

  7. Thinly spread tomatoes, articoke and pepercini (or hot peppers).

  8. Layer each of the meats next.

  9. Layer the provolone on the meat

  10. And then layer the thinly sliced cucumbers.

  11. Place the top of the bread on each sandwich.

  12. Slice each sandwich in half and wrap in tin foil.

  13. Take two cookie sheets and position three of the half loaves on each cookie sheets.

  14. Put one sheet on top of the other and place a bread board on top.

  15. Press down on the sandwiches and tie off the compressed sandwiches.

  16. Store overnight in a refrigerator.

  17. To serve slice in two inch segments.
