Flavorful crispy carrot sliced in ginger and vinegar marinade.

Recipe Ingredients for Pickled Ginger Carrots

6 cups carrots
1/2 cups sliced ginger
1 sliced banana pepper
1/2 cup sugar
2 cups vinegar
2 tsp salt

Recipe Directions for Pickled Ginger Carrots

  1. Mix vinegar, salt, and sugar together until the sugar is dissolved.

  2. Thinly slice a large banana pepper and 1/2 cup of fresh ginger root and ad to vinegar mix.

  3. Thinly slice 6 cups of carrots.

  4. Stir everything together making sure all the carrot slices are coated in marinade.

  5. Cover and refrigerate for at lease 2 hours. Stir again before serving. Keeps up to a week in the refrigerator.
