Pickled Beets. Don't let the calorie count scare you. You don't actually eat all that sugar!

Recipe Ingredients for Pickled Beets - no salt

750 grams Beets
5.33 oz Drinking Water
5.333 oz White Distilled Vinegar
0.5 cup Sugars, Granulated
1 tsp Cloves, Ground

Recipe Directions for Pickled Beets - no salt

Scrub the beets. Do not peel. Do not cut off the ends. Cover with water in a pot and bring to a boil. Turn down the heat and let them sinmer for 45 to 60 min depending on the size of the beets. You can turn the heat off and let them sit in the warm water once you are done and they will get a bit softer. Trim off the ends and slip off the skin. Prepare glass mason jars and lids. Cut the beets into slices or chunks according to you preference and place half of them in each 2 cup / 1/2 litre jar. Mix 2/3 cups of water and 2/3 cups of white vinegar. Bring just to a boil in the microwave (or stove top if you prefer). I use a large glass measuring cup. Add the 1/2 cup of granulated sugar to the water/vinegar mixture. Do not use honey or other substitutes. Mix until sugar is dissolved. Place 4 whole cloves in each jar of beets. Pour hot liquid over the beets to cover and seal. Will keep in the fridge for about 4 weeks.
