I LOVE piccata-type flavors - very tangy. Substitute chicken for the chops.

Recipe Ingredients for Piccata Chops

1 1/4 pounds pork chops, boneless
1/2 cup dry white wine
1 cup chicken stock
1 T cornstarch
2 T lemon juice
1 t dill, fresh
2 T capers

Recipe Directions for Piccata Chops

  1. Spray a skillet or saute pan with cooking spray and place over high heat. Season chops with salt and pepper and brown chops well on both sides. Remove to a plate.

  2. Deglaze the pan with the wine and allow to reduce for a minute or two. Add the lemon juice.

  3. Mix the cornstarch and stock to make a slurry and add to the pan. Cook until slightly thickened.

  4. Add the capers and dill. Return the chops to the pan and cook until done through.
