This Cuban ground‐beef dish has several variations, with many fascinating flavor components?savory, sweet (from the raisins), and a bit salty (from the capers and olives). And, it can be eaten in many different ways. This versatile concoction can be used to stuff peppers, eaten over cooked white rice, made into a stew with the addition of beef or chicken broth, or used as a filling for tacos or fajitas.

Recipe Ingredients for Piccadillo

1 tablespoon olive oil
1 pound lean ground beef
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup white onions
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
15 oz petite diced tomatoes
1 garlic clove, minced
1 teaspoon ground cumin
1/2 teaspoon dried thyme
1/4 teaspoon freshly grated nutmeg
1/4 cup olives
1/4 cup almonds
1/4 cup golden raisins
1 tablespoon cider vinegar
1/4 cup fresh parsley, chopped, for garnish

Recipe Directions for Piccadillo

  1. In a heavy‐duty skillet, heat the oil over medium heat. Season ground beef with salt and pepper and place in skillet, along with onion and peppers. Cook, stirring frequently, until the meat is fully browned and the vegetables are softened, about 5 minutes.

  2. Stir in the tomatoes, garlic, cumin, thyme, nutmeg, olives, almonds, raisins, and bay leaf. Mix thoroughly until well incorporated. Simmer, covered, 10 to 15 minutes to blend the flavors. Add the vinegar and bring to serving temperature. Adjust seasonings, if necessary. Serve hot, garnished with parsley.
